Heat a pan and add the oil, once the oil gets heated add onions and fry them until they change to golden color.Once they changed to golden take out them from the oil and keep aside. After that in that pan only remove excess oil and take the oil which is necessary to prepare the curry. Then add the spices, those are shahi zeera, cloves, green cardamon, cinnamon, bay leaves, let them splutter then add ginger garlic paste fry it until the raw smell goes away, then add turmeric, red chili powder, salt and the green chilies. Mix them all and add little water. Then add the capsicum and fry for 2 - 5 min. Then add finely chopped tomatoes and fry until the raw smell goes away and the curry leaves the oil. Once the oil oozes out add the onions by crushing them. Mix them and add the curd. Fry the curry for at least 2-3 min so that the curd gets cooked. After that add mint leaves and chopped coriander leaves.Mix them all and add the boiled eggs and gently mix them in the curry. Cook for 5 min by closing the lid on a slow flame.
That's it.
The curry tastes little spicy and sweet. If you don't like too spicy you and reduce the red chili powder and instead 4 green chilies you can add one or 2 without slitting.
It tastes little sweet because we are adding lots of onions. If you don't like you can avoid. Instead you can add 2 onions.
